Vinification
Pneumatic presses are used to ensure the most gentle pressure which is gradually exerted on the grapes to give only the finest juices.

The must is carefully selected, and after allowing it to settle naturally, undergoes temperature controlled
fermentation which lasts for 3 weeks.

Heavy Burgundy bottles are used (gravity bottling), using long corks which are marked with the vintage.

A small quantity of the production is vinified in new oak barrels (Nièvre).

The wine
should be served chilled 10° C.

Bouquet : flowery, sappy aromas with hints
of box and blackcurrant.

structure that lingers on the palate.

an aperitif.
