Mainly kimmeridgian limestone with some flinty clay at
St Andelain and areas of Portland clay.
Alluvial deposits are to be found beside the Loire.
Approx. 35 hl/ha from vines
with an average age of 30/50 years.
Pneumatic presses are used to ensure the most gentle pressure which is
gradually exerted on the grapes to give only the finest juices.
The must is carefully selected, and after allowing it to settle naturally,
undergoes temperature controlled
fermentation which lasts for 3 weeks.
Heavy Burgundy bottles are used (gravity bottling), using long corks which
are marked with the vintage.
A small quantity of the production is vinified in new oak barrels (Nièvre).
