100 % Blanc Fumé (Sauvignon Blanc)
1000 ha in the Loire Valley, Center of France
Mainly kimmeridgian limestone with some flinty clay
at St Andelain and aeras of Portland clay. Alluvial
deposits are to be found beside the Loire.
Approx. 50 hl/ha from vines with
an average age of 30 years.
Pneumatic presses are used to ensure
the most gentle pressure which is gradually exerted
on the grapes to give only the finest juices.
The must is carefully selected, and after allowing it to
settle naturally, undergoes temperature controlled
fermentation which lasts for 3 weeks.
Heavy Burgundy bottles are used (gravity bottling),
using long corks which are marked with the vintage.
Should be served chilled 8° C from an ice-bucket.
A golden, green colour, the wine has a lot of flowery,
sappy aromas on the nose with hints of box and
blackcurrant. On the palate it is lively, fresh, and aromatic,
an elegant wine with a long finish marked by the steely flavours,
often referred to as "gunflint", typical of the Appelation.
The wine will benefit from ageing for 4-5 years, or even
longer (depending on the vintage).
Serve with shellfish, white meats and cheese, or on its own as an aperitif.
