POUILLY
SUR LOIRE, from the chasselas grape, traditionally a dessert
grape variety, is a fresh and light white wine.
It
should be drunk between 2 to 4 years old and at a temperature of
10 degres centigrade.
It can accompany "hors d'oeuvres" and "entrées".
Rouge et Rosé de COSNE come
from two different grapes : the Gamay and Pinot noir.
These fresh and light wines can be kept for up to 4 years.
They refine every meal and can be served with meats and
cheese. |

Vinification
of white wine :
-
The must
or juice is delivered to our cellars at the beginning
of October by our winegrowers. We let it stand for 24
hours to allow the skins, pips and stalks to settle in
the vat. The juice is then decanted from these solids,
and begins to ferment. Depending on the year, the fermentation
will last from 3 to 4 weeks.

We maintain
the temperature between 15 to 20 degrees centigrade in
order to extract the maximum fragrance typical of our
appellation.

Our wines
are cold stabilised to prevent tartaric crystal deposits
in the bottle. This is a natural phenomenon in wine which
we accelerate by stocking the wine in the cold prior to
bottling.

Filtration
is carried out to ensure totally clear wine. The wine
is bottle when fully developed and stable.

Our wines
are all controlled by a technicien in oenology who supervises
each stage of the wine-making process..
Our main product
"le POUILLY FUME" is exported to
60 per cent throughout the world.
In France, distribution channels are varied : restaurants,
wholesalers, supermarkets, private buyers.

- Why "Moulin à Vent"
?
Our cellars are on the banks of the river Loire at a place called
"les Moulins à Vent", hence the name which is
unique to our cellars.
